VINIFICATION
Immediately after harvesting, the fresh grapes arecrushed in oak vats, where spontaneous fermentation begins inthe traditional way, involving nothing other than checking thetemperature. Matured for ten months in oak vats, wheremalolactic fermentation takes place spontaneously, beforebottling without filtering.
DESCRIPTION
Light ruby-red colour. On the nose, white flowers, red berries and morello cherries. Elegant and mineral on thepalate, with aromatic notes of red fruit and spices.
FOOD PAIRINGS
Food-flexible wine, ideal with risottos and soups. Meat second courses that are not too elaborate. Excellent with medium-mature cheeses and salamis. Serving temperature 14-16°C.

The grapes come exclusively from vineyards cultivated using organic farming.

HARVEST
Fresh grapes harvested by hand in the first half of September.
VINIFICATION
The fresh grapes, just picked, are immediately crushed in oak vats where spontaneous fermentation begins, with only temperature control. At the end of fermentation, the wine obtained stay in cement awaiting the pressing of the Recioto which will take place in the first days of January. Once the Recioto is obtained, the “Ripasso” will be carried out, a traditional process that consists of putting the new wine in contact for a few days with the skins of the Recioto rich in color, sugars and aromatic substances typical of drying in order to obtain a more important, soft and fragrant wine. Aged in oak barrels for at least 30 months. Bottled unfiltered and with low
sulphite content.
DESCRIPTION
Ruby red color with faint orange reflections. The nose is direct, ripe red fruits blend with the spice of oak, light cocoa. The taste is enveloping, soft, return of crunchy fruit, red berries and cherry.
FOOD PAIRINGS
Medium-bodied wine, well-balanced. Ideal to accompany second courses, such as rabbit, roasts, and grilled meats. Excellent glass to accompany mixed cold cuts and not too mature cheeses. Serving temperature 16-18°C.

HARVEST
When perfectly ripe, the grapes are carefully selected,harvested by hand and placed on five-kilogram racks. They arethen left in the fruit room for over 80 days.
VINIFICATION
The drying process used for this wine reduces theoriginal weight of the grapes, leading to a natural concentrationof the sugars in the must. Fermentation is spontaneous. The skinsare worked daily, with pumping over and punching down to obtainmaximum concentration and bring out the aromas. Malolacticfermentation is spontaneous. The wine is aged in small oak barrelsfor at least 36 months before being bottled without filtering.
DESCRIPTION
Ruby-red in colour with subtle orange reflections. On the nose, ripe red fruit blends with wood spice. Potent andalcoholic on the palate, with persistent tannins balancing thesweetness brought out by the drying process.
FOOD PAIRINGS
This firmly structured wine pairs well with rich redmeats and roasts. Excellent with salamis and mature cheeses. Meditation wine. Serving temperature 18°C.

The grapes are harvested by hand when freshly ripe,in the second ten days of September.
VINIFICATION
The grapes are dried for a month in 5/6 kg crates,before spontaneous fermentation in oak vats and vinification withthe traditional method, involving nothing other than checking thetemperature. The skins are worked daily to extract the maximumamount of polyphenol compounds, to obtain a polished, firmlystructured wine.
DESCRIPTION
Intense ruby-red colour. On the nose, red berriesand spices. Mineral and caressing on the palate, with an encoreof cherry and black pepper.
FOOD PAIRINGS
Mid-structured wine, ideal with red meat, gameand grilled vegetables. The ideal accompaniment to traditionaldishes from Verona, such as pasta and beans, risotto al tastasaland mixed boiled meats. Serving temperature 16-18°C.
